Harvesting spinach after the flowers have bloomed?

I have a spinach plant that just bloomed and I have been told that I should have harvested while the flowers were still buds. Is it ok to harvest it now or is it too late after the flowers open (and if it is too late then why)?Harvesting spinach after the flowers have bloomed?

I enjoy the fact that he's not a typical star who does the overly-advertised movies, (i.e.-- Superman, MI: III, ect), but he does those controversial movies! For example: Edward Scissorhands, V, Jack Sparrow (yay!), ect.
